Clover Hill in the multiverse

In late 2023, Clover Hill Wines held a spectacular lunch at Peppina in Hobart to celebrate their commitment to the multi-verse that is multi-vintage sparkling wines.

I was lucky enough to be invited to hear about the shift to a range of multi-vintage wines, a move designed to showcase the fruit more than the winemaker. They have jettisoned the Cuvée NV and Cuvée NV Rosé and added two wines under the Clover Hill range produced from fruit grown in the Pyrenees region of Victoria.

The multi-vintage approach will focus on more Chardonnay, a regime of 40% reserve wines, more stainless steel, pressured vessels, and the capture of freshness in every wine.

To illustrate the different approaches that former winemakers had taken, we were treated to a range of previous vintages by Karina Dambergs, Loïc Le Calvez, Robert Heywood and Peter Warr.

We ate like royalty. The freshness and integrity of each dish was an absolute delight, everything was so delicious and allergies were catered to with the same attention to detail as the rest of the group. The standouts for me were the Polpette al Forno meatballs, and the Barbabietole, pickled beetroot with goat curd.
